GOATS CHEESE, ROASTED GRAPE & HOT HONEY CROSTINI
TART, HOT, TANGY
Ingredients:
(Serves 4)
→ 500g red grapes
→ 2 tbsp sherry vinegar
→ 150g goats cheese
→ Zest of 1 lemon
→ Small pinch of salt
→ 1 large baguette
→ 1 garlic clove
→ Fresh thyme
→ Hot honey
→ Olive oil
→ Salt
→ Black pepper
METHOD
Step 1:
Preheat the oven to 180C.
Step 2:
Add the grapes to a baking tray. Drizzle with 1 tsp olive oil and sherry vinegar. Season with salt. Roast for 10 minutes.
Step 3:
Smash the ghost cheese in a bowl. Add the lemon zest and 1 tbsp olive oil. Mix until smooth. Season with plenty of black pepper and salt.
Step 4:
Slice your baguette on the diagonal. Drizzle the slices with olive oil and toast on both sides in a hot pan until golden and crispy. Whilst warm, rub generously with garlic.
Step 5:
Spread the goat's cheese on the garlicky toast. Scatter over roasted grapes. Top with fresh thyme and a generous drizzle of hot honey.
