WHY YOU'LL LOVE THIS RECIPE
MOTH: Espresso Martini - The secret to a fabulous chilli. Espresso Martini helps offset the acidity of the tomatoes and enhances the chilli’s overall flavour profile by giving it rich, earth and slightly sweet tones.
One Pan - This is a super simple, one pan dish. There’s minimal washing up needed and you can serve the dish on the table.
Vegetarian - This is not your classic chilli con carne, it’s a chilli sin (without) carne. As a meat eater, I genuinely have to say I prefer a veggie chilli to the classic. The textures, colours and flavours all come together so wonderfully.
ESPRESSO MARTINI CHILI SIN CARNE
WARM, SMOKEY, COMFORTING
Ingredients:
(Serves 4)
For roasting the sweet potatoes:
→ 700g sweet potato, chopped into small cubes
→ 2 tbsp olive oil
→ Paprika
For The Saucy Bit
→ 1 white onion, finely sliced
→ 3 garlic cloves, minced
→ 2 tsp paprika
→ 1 tsp chilli flakes
→ 1 tsp ground cumin
→ 2 tbsp tomato paste
→ 400g tinned tomatoes
→ 200ml stock
→ 400g black beans
→ 50ml MOTH: Espresso Martini
For Garnishes
→ 1 avocado, mashed
→ 2 tbsp sour cream
→ 5 baby plum tomatoes, chopped into quarters
→ 1/4 red onion, finely sliced
→ Coriander, roughly chopped
→ 1 lime, cut into quarters
How To Make MOTH: Espresso Martini Chilli Sin Carne
Step 1: Roast your sweet potato

Preheat your oven to 180C.

Add your sweet potato cubes to a cast iron/oven-proof pan. Drizzle with oil and sprinkle over paprika, a pinch of salt and grind of pepper. Give everything a good mix, cover with kitchen foil and place in the oven for 30 minutes.
Step 2: Fry your garlic, onion and spices

Remove the sweet potato from the oven and set it aside in a bowl.

Place the same pan on medium heat and add in the chopped garlic, onion and spices. Stir and fry for 10 minutes until the onions have softened.
Step 3: Add in your tomatoes

Add the tomato paste and tinned tomatoes.

Pour in the stock cube and 200ml water. Give it a good stir and bring to the boil. Then, leave to simmer for 10 minutes.
Step 4: Add the bulk & espresso martini

Transfer the cooked sweet potato back into your pan along with the black beans. Stir and season to taste.

Next, add in the MOTH: Espresso Martini. Feel free to add more based on your taste preferences. Simmer for a further 5 minutes.
Step 5: Garnish and serve up

Top with the avocado smash, sour cream, chopped tomatoes, sliced red onion, coriander and a squeeze of lime. Serve and enjoy on its own or with rice.
