RIGATONI ALLA NEGRONI
SHARP, BRIGHT, BALANCED
→ 50g butter
→ 1 white onion, finely sliced
→ 3 garlic cloves, minced
→ 1 tsp chilli flakes
→ 1 tsp paprika
→ 2 tbsp tomato paste
→ 100g baby tomatoes, chopped
→ 50ml MOTH: Negroni - Add in the 50ml to your meal, then drink the rest while you make it!
→ 300ml single cream, or plant based alternative
→ 400g rigatoni
→ 50g grated parmesan, plus more for serving
Step 1: Fry Your Onion & Garlic
Place a non-stick frying pan on medium heat and add in your butter. Once your butter has melted, add in your onion, garlic, chilli flakes, paprika, a pinch of salt and a grind of pepper. Fry for around 10-15 minutes until the onions are soft and lightly caramelised. Stir frequently to avoid the onion and garlic browning too much.
Step 2: Cook Your Pasta
Meanwhile, place a pot of salted boiling water on the hob and add in your rigatoni pasta. Cook until al dente, so for one minute less than the packet instructions recommends.
Step 3: Complete Your Sauce
Next up, add your baby tomatoes, tomato paste, and MOTH:Negroni to your frying pan, give it a good mix, and fry for another 5 minutes so the Negroni can reduce. Pour in your single cream and give everything a good mix. Transfer your mixture into a blender, add in a few tablespoons of the pasta water, and blend your sauce until smooth. Taste the sauce and season based on your preference!
Step 4: Combine Your Sauce & Pasta
Pour your sauce back into your frying pan and then add in your rigatoni and grated parmesan. Give everything a good mix until the pasta is covered in your creamy tomato negroni sauce. Enjoy!
