NAT’S SWEET AND SMOKY ROTIS
JERK CAULIFLOWER ROTIS
You need:
1 cauliflower head
2 tbsp olive oil
2 tbsp jerk seasoning
Rotis
Pineapple salsa:
2 tbsp diced pineapple
2 tbsp diced avocado
1 tbsp diced chilli
1 tbsp diced red onion
1 tbsp coriander
1 lime
Salt & pepper
Slaw:
¼ red cabbage
1 tbsp mayo
Squeeze of lemon
→ Preheat the oven to 200C
→ Cut the cauliflower into florets. In a large bowl, mix jerk seasoning with olive oil. Add cauliflower. Mix well. Roast on a baking tray for 25 minutes.
→ To make the salsa, combine the ingredients in a bowl. Add lime juice and salt.
→ Slice your cabbage finely. Add mayo, lemon juice, salt.
→ Warm your roti in the oven for 5 minutes.
→ Time to assemble. Layer your Roti with slaw, cauliflower and salsa. Add another squeeze of lime to taste.
Dig in.
