MORE THAN A COLLINS: ALL ABOUT GIN

A can floating in a swimming pool.

Gin’s something of a shapeshifter. Pair it with tonic for instant refreshment. Stir with Campari and vermouth for a taste that takes you to rolling Venetian hillsides. Top it with Champagne and lemon and suddenly you’re celebrating something. Oh là là!. It’s versatile enough for easy gin cocktails at home. Bold enough to carry the classic gin cocktails in any bar.

How Is Gin Made?

A short answer? Neutral spirit + botanicals (led by juniper) + distillation = gin.

The longer one? Gin begins life as a clean, neutral grain spirit — a blank canvas ready for flavour. Into that, distillers add botanicals, with juniper always taking centre stage. It’s joined by coriander seed, angelica root, citrus peel, orris root, cardamom and countless other flavour friends. Each one brings their own lift, spice or depth. The botanicals are either steeped in the spirit before distillation, vapour-infused in a basket within the still or a mix of both for balance.

Styles vary: “London Dry” isn’t a postcode but a method. Redistilled with botanicals, free of artificial flavourings. Clean as they come. While contemporary gins may lean more into bold citrus, floral tones or local botanicals. However it’s made, the result is a spirit built for mixing. That’s why cocktails with gin range from sharp, zesty highballs to rich, stirred sippers.

A VERY BRITISH LOVE STORY: THE HISTORY OF GIN IN BRITAIN

From Victorian gin palaces to rooftop bars in Shoreditch, gin has long found itself in the hearts (and glasses) of the British public. Originally brought over from the Netherlands in the 17th century, we quickly claimed it as our own. Sparking a full-blown “gin craze” in the 1700s and laying the foundations for the classic gin cocktails we love today.

The G&T, for example, wasn’t born in London but in colonial India, as a way to make quinine (for malaria) a little more drinkable. And the Negroni? Italian in origin, of course. But a staple at every bar worth its spirits. Gin’s nothing if not adaptable. At home in crisp summer serves. Or warming winter mixes.

ENTER: THE G&T

And became your forever staple. Quinine met sugar, citrus, ice and gin. The Gin and Tonic became a daily art form. The blueprint for gin drinks that are bright, balanced, botanically-led. From there: the Martini, Negroni, Tom Collins and French 75 cemented gin’s place in every decent cocktail book.

TIMELESS FAVOURITES

  • Gin & Tonic – Bright, botanical, endlessly refreshing. The biggest name in easy gin cocktails.

  • Negroni – Bitter, sweet, unapologetically bold. 1 part gin, 1 part vermouth, 1 part Campari. Or let us make it for you?

  • Tom Collins – A tall, sparkling mix of gin, lemon, sugar and soda. A real summer thirst quencher.

OUR GIN FAVES

At MOTH, we believe in doing justice to the classics. So anyone can enjoy world-class cocktails anywhere they like. Whenever they fancy. Every can is mixed with the same care as the best bar in town: quality spirits, painstakingly-perfected recipes, zero shortcuts.

We work with the best-of-the-best spirit partners to ensure every sip is spot on. Like Tarquin’s Cornish Gin. Handcrafted award-winning gin. From the first Cornish distillery in over 100 years. Beautiful, balanced botanicals. Delicious and meticulous – it even includes handpicked violets. Or Asterley Bros: small batch English vermouth. Made by two brothers in South London. Both big fans of organic ingredients. Expect deep flavours – perfect for our sippers.

Along with our secret recipe of Italian bitters. Expect plenty of bitterness - you'll like it or you won't. The darker tones give a deep balance to the Negroni's citrus flavours.

PAIRING GIN COCKTAILS WITH FOOD

Gin loves flavour. Especially ones that are salty, citrusy, spicy. These are cocktails with a knack for making food sing. Crisp botanicals that lift light bites. Complex bitters to match rich flavours. Citrus notes to reset the palate. Here’s how to pair them like a pro.

Oysters with Shallot Mignonette

A bright Gin & Tonic brings a briny freshness that echoes the sea, while its citrus lift cuts through the oyster’s richness. Perfect for starting the evening with a flourish — especially if you’re leaning into the art of aperitivo.
Top tip: Serve your oysters ice-cold with lemon wedges on the side.

Herb-Crusted Lamb Chops

The herbal depth and bitter-sweet balance of a Negroni make it a bold match for lamb — rosemary, thyme, and a touch of char meet the cocktail’s botanicals head-on.
Top tip: Rest the lamb well before slicing to keep all those juices in.

Lemon Posset with Shortbread

A French 75 dances beautifully with creamy citrus desserts. The gin’s botanicals and Champagne bubbles keep each spoonful feeling light and celebratory.
Top tip: Use fresh lemon juice and a dusting of zest for extra brightness.

Bonus: Rigatoni alla Negroni

Gin doesn’t just belong in the glass — it can make its way onto the plate. Our Rigatoni alla Negroni recipe marries the rich, bittersweet flavours of the classic cocktail with hearty pasta for the ultimate dinner-party statement.

Top tip: Save a splash of the cocktail for the cook — you’ve earned it.
